Oriental Fish Dish

This recipe is quick and easy using good value food ingredients.  We use Dorado but any other fish that you prefer or is available will do just as well.  You can create your own “Chinese type” meal with either rice or egg/rice noodles.  This recipe serves 4 but you can easily add more to increase the amount.

Ingredients:

Thin sliced pieces of fish approximately 2” long x 1”
1 tablespoon cornflour
1 tablespoon sherry
2 tablespoons soy sauce
1 clove garlic, crushed
4 carrots cut into thin 2” lengths
1 white or red onion cut into thin 2” lengths
1 small bunch of spring onions cut into 2” lengths
A hand full of bamboo shoots
1 small piece of ginger diced or teaspoon of liquidized ginger
¼ pint of vegetable stock
Vegetable oil for cooking

 

Method:

Cook the garlic and ginger in a little oil for a few minutes.  Add the vegetables for a quick fry effect and then add stock. Simmer until vegetables are just under done. Put into a serving dish and keep warm.
Mix the cornflour, sherry and soy sauce in a bowl and add the fish to the mixture.  Heat a little oil and cook the fish mixture in the same pan as the vegetables were cooked in.  This will allow the fish to pick up a little of the vegetable flavours.  Cook the fish for just a few minutes, no more.
Place the fish on top of the vegetables and serve with rice or noodles.
